This is delicious - lighter than the traditional garbanzo beans/chick pea recipe and a good way to get some vegetables in! I make a batch of this weekly - it’s quick and easy:
From the book, “Raw Food Made Easy for 1 or 2 People” by Jennifer Cornbleet:
Zucchini Hummus
1 1/2 cups fresh zucchini, peeled and chopped
2 tablespoons raw tahini
2 tablespoons fresh lemon juice
1/2 teaspoon raw garlic (about 1 clove)
1/4 teaspoon cumin
1/4 teaspoon paprika
1/4 teaspoon sea salt
Put everything into the food processor and with an s shaped blade, process til smooth. Store in sealed container in refrigerator. Will keep in fridge for five days. Makes 1 to 2 servings.
Total prep time is about 5 minutes. So easy!
I usually add 1/4 teaspoon cayenne pepper for some zip and eat with cut up cucumbers, celery and carrots. Good as a sandwich filling and I suppose crackers as well.
