Apple Omelet
Slightly sweeten egg batter with a little natural sweetener, i.e. - honey, agave nectar, a packet or two of artificial sweetener will work too.
Thinly slice a granny smith apple
Once egg batter sets in pan, layer apple slices on top, add cinnamon to taste (I use a lot) and a little more natural sweetener if you like (although not necessary). Fold over, finish cooking and serve.
You can add ricotta cheese or cottage cheese to the filling as well.
This is really good and filling.
Morning Oatmeal
Take cooked steel cut oatmeal (I cook a big batch the night before or soak overnight to eat raw or quickly cooked the next morning) and mix in a tablespoon or two of NATURAL peanut butter. Add frozen blueberries or other fruit to sweeten. Sprinkle with crushed almonds or walnut pieces.
